often involves temperatures below FDA recommended safe minimum cooking temperatures, but can still be safe
whendoneforthecorrectamountoftime—aslongasthetemperatureremainsabove54°C(130°F).Several
factorsaffectthetimerequiredtopasteurizefoods,includingcookingtemperature,initialfoodtemperature,food
thickness,andfoodpreparation.Followallproperinstructionsrelatedtofoodpreparation,cooking—including
timeandtemperaturerequirements—andstorageduringsousvidecookingtopreventfoodborneillnesscaused
byharmfulbacteria.DiscardfoodifithasbeenleftattemperaturesintheFDADangerZone(4°C(40°F)to60°C
(140°F))formorethanfourhours.Coolfoodsquicklyusinganicebathifnotconsumingdirectlyaftercooking.
