Preparation Note:The right and left sides of the griddle are designed as if you are facing the front of the griddle.
Assembly lnstructions Assemble the side shelves (1) to the cart beams (2) with 8 bolts (A) as shown. Please note: secure and tighten all the bolts until step 3. Insert the casters (4) to the side shelves by twisting clockwise until tightened, Turn over the bottom assembly when completed and lock all casters to prevent it from moving. Assemble the side shelves (1) to the bottom shelf (3) with 4 bolts (A) .
Assembly lnstructions Align and place the main body (7) onto the side shelves. Assemble the cart joint (8,9) to the side shelves and main body with 4 bolts (A) as shown. Fasten the cart joints to each side of main body and cart with 8 bolts (A) as shown. Assemble the side table braces (10,11) to the main body with 8 bolts (A) . Fasten the side table joints (12,13) to side tables (14) with 12 bolts (A). Screw 8 bolts (B) to the side table braces, then attach the side tables to the brace.

Trouble Shooting Guide Turn off control knobs and LP tank valve. After fire is out and griddle is cold, remove burner and inspect for spider nests or rust. see natural hazard and cleaning the burner assembly pages.
1. Clean burners and inside of griddle/ firebox 2. Trim fat from meat before grilling. Turn front of griddle to face wind or increase flame height. Refill LP tank. Refer to “sudden drop in gas flow” above. Turn knobs to OFF. Turn gas off at LP tank. Leave lid in position and let fire burn out. After griddle cools, remove and clean all parts 1. Clean burners and inside of griddle/firebox 2. Trim fat from meat before grilling. 3. Adjust (lower) temperature a) Turn the burner on for 15 to 20 minutes.

STEAK (& ALL MEATS): KABOBS: • Cook food on the charcoal side of the unit, directly above coals/heat. • To grill meats, raise fire grate to high position (hot) and sear for one minute on each side with the lid open to seal in flavor and juices.Then lower fire grate to medium position with lid closed and cook to desired doneness. • Control heat with dual dampers and adjustable fire grate. Tip: Place grilled meat back in the marinade for several minutes before serving – it will become tastier and juicier.
