Cooking with the sous vide method has many benefits: When meat and fish is cooked with the sous vide technique it becomes really delicate and juicy and vegetables keep their vitamins. Even desserts can be prepared. With our little recipe book we want to give you a few suggestions what you can do with our products.

COOKING SOUS VIDE SOUS-VIDE KOCHEN CASO SV900 8 9 WHAT IS „SOUS VIDE“ COOKING? WAS IST „SOUS-VIDE“-KOCHEN? „Sous vide“, french for „under vacuum“ means the preparation of meals in a hot water bath that have been vacuum-sealed in a vacuum bag before. „Sous vide“ , frz. für „unter Vakuum“ bedeutet das Zubereiten von Gerichten im heißen Wasserbad, die zuvor in einem Vakuumbeutel verschweißt werden. The CASO Sous Vide device includes a vacuum sealer; therefore you do not have to buy two new devices.
HOW TO: 1 PREPARATION OF INGREDIENTS Prepare the food as usual. Remove e.g. unwanted fat and sinews of meat. 2 PORTIONING It is best to cook the meat in a whole piece and cut it into desired pieces just after the cooking. This way the meat keeps its form better and stays juicier. 3 FILLING THE VACUUM BAG Roll up the edges of the vacuum bag, because they have to be absolutely clean. Fill the bag with the food as well as herbs, spices and butter or oil.
BASIC: STEAK – ON POINT BASIC: STEAK – AUF DEN PUNKT COOKING METHOD ZUBEREITUNG STEP 1 Season the steak with salt and pepper and put it into a vacuum bag together with the branch of rosemary. Das Steak salzen und pfeffern und zusammen mit dem Rosmarinzweig in einen Vakuumierbeutel legen. STEP 2 Vacuum-seal the bag and put it into the water of the sous vide device. Let it cook for 30 min. at 60 °C. Den Beutel vakuumieren und in das Wasserbad des Sous-VideGerätes legen. Für 30 Min. bei 60 °C garen lassen.

TURKEY HAM WITH ZUCCHINI SALSA INGREDIENTS 800 g turkey breast 800 g Truthahnbrust 3⁄4 branch of rosemary 3⁄4 Zweig Rosmarin 3 medium-sized zucchinis 3 mittelgroße Zucchinis 2 tsp. mild mustard 2 TL milder Senf juice of a medium-sized lemon Saft einer mittelgroßen Zitrone olive oil Olivenöl salt, pepper Salz, Pfeffer TRUTHAHNSCHINKEN MIT ZUCCHINI-SALSA COOKING METHOD ZUBEREITUNG TURKEY TRUTHAHN Finely chop the rosemary.

Put them into a vacuum bag together with the grated peels of the citrus fruits and vacuum-seal it.
BEETROOT WITH GOAT CHEESE ROTE BEETE MIT ZIEGENKÄSE COOKING METHOD ZUBEREITUNG STEP 1 Peel the beetroot, put it into a vacuum bag and add the honey. Die Rote Beete schälen, in einen Vakuumbeutel legen und dann den Honig hinzufügen. STEP 2 Vacuum-seal the bag and put it into the water of the sous vide device. Let it cook for 50 min. at 80 °C. Den Beutel vakuumieren und in das Wasserbad des Sous-VideGerätes legen. Für 50 Min. bei 80 °C garen lassen.
POLENTA WITH PARMESAN ONION SOUP POLENTA MIT PARMESAN ZWIEBELSUPPE COOKING METHOD INGREDIENTS ZUTATEN 400 g onions 500 ml veal stock 1 tbsp. sweet paprika 15 green peppercorns 1 bay leaf 5 saffron threads 1 tsp. salt 1 pinch grounded nutmeg 1 branch of thyme 400 g Zwiebeln 500 ml Kalbsfond 1 EL Paprika edelsüß 15 grüne Pfefferkörner 1 Lorbeerblatt 5 Safranfäden 1 TL Salz 1 Msp.
ORANGE AND ENDIVES WITH GORGONZOLA ORANGEN-CHICORÉE MIT GORGONZOLA COOKING METHOD INGREDIENTS ZUTATEN 4 endives 6 tbsp. orange marmelade 12 walnut cores, halved 200 g gorgonzola 4 Chicorée 6 EL Orangenmarmelade 12 Walnusskerne, halbiert 200 g Gorgonzola ZUBEREITUNG STEP 1 Remove the outer leaves of the endives and cut the endives lengthwise into halves. Put the halves side by side into a vacuum bag, add 3 tablespoons of orange marmelade and the walnut cores and vacuumseal it.
CARROT GINGER SOUP KAROTTEN-INGWER-SUPPE COOKING METHOD ZUBEREITUNG STEP 1 Peel the carrots and cut into slices. Shortly roast them in a pan with some butter and sugar. Add the vegetable stock, the coconut milk and the carrot juice. Season with salt, pepper, curry and ginger. Karotten schälen und in Scheiben schneiden. Mit etwas Butter und Zucker kurz in einer Pfanne anbraten. Mit Gemüsebrühe, Kokosmilch und Karottensaft ablöschen. Salzen und pfeffern und mit Currypulver sowie Ingwer abschmecken.

Mix with sugar, salt and milk.
